The pot does the work.
The technique came from China: rotating cooking pots and controlled heat, which is what gets pasta to the right texture and keeps it there. We brought it to Iraq and put authentic Italian flavours through it.
Nothing sits under a heat lamp. Every dish is built from scratch once you order, so changing it is easy. Extra chicken, no mushrooms, a different sauce, more chili. Ask at the counter and it's done.
